Baked Spaghetti


Living in Valdez, away from civilization and fast food, has forced me to cook--a lot! Here is a recipe I found for Baked Spaghetti a while back that is very similar to "K&W Cafeteria" baked spaghetti! One of our favorite meals that I make at least once every couple of weeks!

-6 oz. spaghetti
-1 lb. ground beef
-1 c. chopped onions
-3/4 tsp. salt
-1/4 tsp. pepper
-1/2 tsp chili powder
-3/4 c. cheddar cheese
-1/2 c. mozzarella cheese
-1 Tbsp. Worcestershire Sauce
-1 1/4 c. Ketchup
-1 Tbsp. Mustard
-3/4 c. Beef Stock

*Cook spaghetti . Drain, set aside.
*Cook hamburger & onion. Drain.
*Cook rest of ingredients in a saucepan (minus the cheese), bring to a boil--or at least heat up.
*Mix sauce, noodles, hamburger/onion, and cheese.

*Put in a baking dish.
*Top with remaining cheese (to your liking..we like LOTS!!)
*Bake @ 350 for 30 minutes

I really like this recipe because its easy easy easy, and I usually have ALL of the ingredients and don't have to go to the grocery store! And did I mention, it's SUPER yummy?!?!

Testing 1,2,3.....

So lately I have found myself constantly looking at recipe blogs all over the internet, and I have to admit--I'm obsessed with them!!!  I love cooking and trying new recipes, and am bored quite often so I have found these blogs to be the answer to my boredom and my love of cooking! I've tried a few recipes from these blogs and most have been quite delicious soooo....during my boring day today I found a recipe for a "rainbow cake" that I am interested in trying. I also had the brilliant idea to try to do one of these "recipe blogs" myself..so when I finish my cake (which I'm going to make in just a few) I will post pictures similar to how the blogs I have seen do! Keep in mind that I'm no baker...! Stay Tuned!!! :)

The Past 3 Months....

Have FLOWN by! Where has the time gone?!?  Although I miss my family terribly and can't wait to enjoy some warm and sunny weather, I have to say that I will miss this place (a little!!!). I have gotten quite used to little Valdez, and it actually feels like my 2nd home now.  I have made a few friends during this short visit, and also discovered a little 'hole in the wall' cafe in town-both of which I will miss very much while I'm home!! But--I won't get too sappy too fast, I'll be back soon enough (Sept. 2nd) just in time for more snow! Here are a few pictures from the past few months.  This is the MOST beautiful place I have ever seen, and although it's not the 'best' place to live I would definitely suggest everyone come and visit at least once in your lifetime! :)

Friday, April 2, 2009 Jason and I decided to go out to the Valdez glacier for the afternoon.  It was a beautiful day out, and we had been talking about going for about a month so I suggested we go, and he agreed.  So after taking about an hour or so to get everything ready we finally headed out there.  We drove out as far as we could and then parked the truck and rode the 4-wheeler out to the lake.  We were a little worried about taking the 4-wheeler out on the frozen lake to get to the glacier, because its starting to warm up and we didn't want the ice to break on us, so we decided to walk instead...boy was that an experience!! It was a LONG walk!  We finally came up to different parts of the glacier, and it was AMAZING! There were big blocks of ice everywhere, ice caves and tunnels.  We finally came up to this hill where you could see a big hole at the top that goes completely through to the other side.  We decided to climb it and when we finally got to the top it was so beautiful I couldn't believe it.  So we hung out for a while, froze a little bit, I complained a lot :) and then we started to head back.  Before we left the 'hole' Jason bent down to get some things out of his book bag. He handed me my hat and I started bundling back up before our big hike.  I was in the process of putting on my gloves when I looked down at him and he has this huge grin on his face and is holding a box. I immediately realized what was happening and ripped my gloves off! It was the most amazing proposal I could have ever asked for, and definitely something that I will never forget! Needless to say, the hike back was not half as painful as the one there for neither me or him.  I grinned from ear to ear the whole time, and he didn't have to hear me complain as much! I'll post a few pictures of this beautiful place for everyone to see, definitely worth a trip to Valdez!
