Strawberry Shortcake Cake

Okay, I don't know if you guys have heard of Pioneer Woman, I'm sure most of you have because I have heard you talk about her or her recipes, and you all know that they are super yummy if you have tried them. I ordered her cook book last week as a late Birthday present and got it and I seriously LOVE this cook book, I want to cook almost everything in it! I found a recipe for a Strawberry Shortcake Cake on her blog the other day and had to try it--even though I cannot bake to save my life.

Seriously ya'll, MAKE THIS CAKE. It is DIVINE. HEAVEN ON A PLATE. DELICIOUS. I cannot express with words how YUM this cake is, you just have to trust me and make it TODAY. And let me know what you think, even though I already know what you are going to think, I want to hear what kind of words you can come up with to describe it. Don't waste anymore time reading this, go out, get the ingredients (most of which you probably already have in your cabinets or fridge) and make it. Here is the   recipe. Now go!

Pulled BBQ Chicken Sandwiches

Last night I made these pulled BBQ chicken sandwiches for dinner. They're quick, easy and really yummy!

-Cook and shred 4-5 chicken breast

In a saucepan combine the following:
-1 1/2 c. Ketchup
-4 T. Worcestershire sauce
-3 T. Grey Poupon mustard
-4 T. Brown sugar
- 1 1/2 T. Lemon juice
-2 T. Apple Cider Vinegar
-1 tsp. Honey
-1 tsp. Cracked black pepper
-dash of salt

Cook on low for 15 minutes, add shredded chicken.



I usually serve it with slaw on a hamburger bun, but it's good without!

Superbowl Sunday

I don't really care for sports except for the occasional college basketball game, and honestly, I usually pick the team that I am pulling for by deciding which team has the hottest guys :o) Like tonight--I was pulling for the Colts to win the Superbowl. Not because I dislike the Saints, but because Kendra Wilkinson's husband plays for the Colts and he seems like a nice guy from what I have seen on their show--HA! So, needless to say I was most excited about eating good food all day--and maybe catching a few funny commercials. A couple that Jason and I are friends with had some people over to watch the Superbowl and to play games so I went over there for a while and hung out. Everyone brought appetizers over and I made my famous Buffalo Chicken Wing Dip. For some people it's too spicy but the men LOVE it, and some have even sworn that I put crack in it ;o)

Give it a try if you ever cook for a group of men or if you are like me and adore spicy foods :o)


4-5 boneless chicken breast
1 bottle of Franks Red Hot Wing Sauce--or your preferred wing sauce
8 oz. Cream Cheese
2 c. Shredded Cheddar Cheese

-Boil the chicken breasts until they are fully cooked. Pull apart or cut into tiny pieces.
-Mix the whole block of cream cheese with the whole bottle of hot sauce. I put the cream cheese in a bowl and microwave it in 30 second intervals until its melted--it mixes easier this way and doesn't come out chunky.
-After your cream cheese and hot sauce are mixed together, add the chicken and pour into an 8x8 casserole dish.
- Bake @ 350 for 20 minutes.
-Top with shredded cheese and bake for 10 more minutes. Serve with tortilla chips.

This is what your dip should look like before you put it in the oven to bake. Be careful not to make it too thick!

Paula Deen is my homegirl...

Since I made it a goal of mine to post more this year, and have found myself running out of interesting things to post about (I know, already), I decided to share one of our favorite recipes. Before I found this recipe I had never planned on even attempting to make fried chicken.Ever. But when your husband wants it, duty calls. So one day a few weeks ago, duty called from work wanting fried chicken for dinner, so I get my google fingers on and start looking for recipes, because I don't attempt fried foods, so I didn't have a recipe. I tried to cook fried pork chops once and it didn't work, so I've been scared of fried foods ever since. (I think it's because you have to use flour....I have found that ANY recipe that calls for flour usually gets tossed because me and flour don't get along. I don't know why). Anyways, when I came across Paula Deen's recipe for Southern Fried Chicken, I knew this was 'the one' since her recipes never fail to amaze me (or haven't so far), and she also says 'Ya'll' , so I know she knows how to make it like we like it :o) It's really basic, really easy and REALLY YUMMY--especially when you have a sweet husband that enjoys using the Fry Daddy to fry it up!
Ingredients:
-3 Eggs
-1/3 c. water
-1 c. Texas Pete (or your preferred hot sauce, if your from the South it will be Texas Pete)

Mix Eggs and water with a mixer, add Texas Pete and stir until blended. Your mixture should be orange.

Mix 2 c. of self-rising flour with a tsp. of pepper.

Season chicken with Paula Deen's house seasoning:
-1 c. salt
-1 c. black pepper
-1 c. garlic powder
DO NOT use all of this to season your chicken. Mix all of this together and put it in a container to use in the future, just sprinkle this pre-mixed seasoning on your chicken to your liking. If you cook pretty much anything 'Paula Deen' you WILL use this house seasoning again so it won't be a waste. If not, calculate on your own time how much you need just for this recipe--I'm no math whiz :o)
Dip the chicken in the egg wash, then coat with flour.
Fry in oil heated to 350 degrees.
Dark meat should take 13-14 minutes to cook, white meat should only take 8-10.


One word is all I need to describe this meal.....


YUM-O!
We had fried squash and collards with this, and Not Yo' Mama's Banana Pudding for dessert..I'll save that for another day :o)

Baked Spaghetti


Living in Valdez, away from civilization and fast food, has forced me to cook--a lot! Here is a recipe I found for Baked Spaghetti a while back that is very similar to "K&W Cafeteria" baked spaghetti! One of our favorite meals that I make at least once every couple of weeks!

-6 oz. spaghetti
-1 lb. ground beef
-1 c. chopped onions
-3/4 tsp. salt
-1/4 tsp. pepper
-1/2 tsp chili powder
-3/4 c. cheddar cheese
-1/2 c. mozzarella cheese
-1 Tbsp. Worcestershire Sauce
-1 1/4 c. Ketchup
-1 Tbsp. Mustard
-3/4 c. Beef Stock

*Cook spaghetti . Drain, set aside.
*Cook hamburger & onion. Drain.
*Cook rest of ingredients in a saucepan (minus the cheese), bring to a boil--or at least heat up.
*Mix sauce, noodles, hamburger/onion, and cheese.

*Put in a baking dish.
*Top with remaining cheese (to your liking..we like LOTS!!)
*Bake @ 350 for 30 minutes

I really like this recipe because its easy easy easy, and I usually have ALL of the ingredients and don't have to go to the grocery store! And did I mention, it's SUPER yummy?!?!

Testing 1,2,3.....

So lately I have found myself constantly looking at recipe blogs all over the internet, and I have to admit--I'm obsessed with them!!!  I love cooking and trying new recipes, and am bored quite often so I have found these blogs to be the answer to my boredom and my love of cooking! I've tried a few recipes from these blogs and most have been quite delicious soooo....during my boring day today I found a recipe for a "rainbow cake" that I am interested in trying. I also had the brilliant idea to try to do one of these "recipe blogs" myself..so when I finish my cake (which I'm going to make in just a few) I will post pictures similar to how the blogs I have seen do! Keep in mind that I'm no baker...! Stay Tuned!!! :)
